What is a Tandoor Oven?
A tandoor is a cylindrical clay oven that burns charcoal at its base and reaches temperatures between 400°C and 480°C (750–900°F). The clay walls absorb and radiate heat evenly in all directions. Bread dough is slapped directly onto the interior clay walls and bakes in just 60–90 seconds — producing the unique combination of smoky exterior, charred blisters, and soft, airy interior.
Three Reasons Tandoori Bread is Smoky and Flavorful
1. Charcoal Smoke
The charcoal fire at the base of the tandoor produces continuous smoke that rises through the oven and permeates the bread as it bakes. This smoke is absorbed directly into the dough, giving tandoori bread its characteristic smoky aroma that is impossible to replicate with gas or electric ovens.
2. Extreme Heat Charring
The intense heat of the tandoor causes the surface of the bread dough to char slightly in specific spots — creating the dark, blistered patches you see on authentic naan and roti. These char marks are not burnt — they are caramelised, and they carry a deep, complex, smoky flavour.
3. Clay Wall Mineral Flavour
The clay walls of the tandoor impart a subtle earthy, mineral flavour to the bread that simply cannot be achieved in any other type of oven. This is the flavour that makes people say 'this tastes like real Indian bread' — it is the clay itself adding something unique.
